Sometimes the most healing thing we can do is slow down…starting with a loaf of fresh homemade bread.
Why No-Knead Bread?
This no-knead bread recipe is simple, grounding, and made with just four wholesome ingredients. It's not just about eating it's about the process, the pause, and the nourishment. If you've never made bread before, don't worry. This recipe is simple and beginner-friendly and requires no kneading… however, just a bit of patience and presence.
I featured this recipe in my recent Mindful Baking YouTube series, where I explored how intentional cooking can reconnect us to our bodies, memories, and emotional wellness. This is the first in a multi-part series dedicated to baking as a form of self-care.
Each recipe is simple, soul-soothing, and rooted in the idea that nourishment goes beyond calories.
Ingredients You’ll Need:
Classic Version:
3 cups unbleached all-purpose flour
1¼ tsp salt
¼ tsp instant yeast
1½ cups lukewarm water
Gluten-Free Version:
3 cups gluten-free all-purpose flour
1½ tsp salt
½ tsp instant yeast
1½ cups warm water (about 110°F)
Instructions
1. Mix the Ingredients
In a large mixing bowl, stir together the flour, yeast, and salt. Slowly add the water and mix until a shaggy, sticky dough forms. This step doesn’t need to be perfect—just intuitive.
Let It Rise
Cover the bowl with a clean kitchen towel or plastic wrap and let it rest at room temperature for 12–18 hours. Overnight works great. During this time, the dough will rise, bubble, and transform. Just like us, growth happens quietly and with time.
3. Shape and Rest Again
Turn the dough out onto a floured surface and gently shape it into a ball. Let it rest while you preheat the oven to 450°F. Place a Dutch oven or heavy pot (with the lid) in the oven while it heats.
4. Bake to Perfection
Carefully remove the hot pot from the oven. Place the dough inside (you can use parchment paper for easier transfer). Cover with the lid and bake for 30 minutes. Then, remove the lid and bake for another 15–20 minutes until it’s golden brown.
5. Cool and Reflect
Remove the bread and let it cool on a wire rack. Listen for the crackling crust as it cools—it’s the sound of satisfaction. Slice, serve, and take a deep breath. You made this.
